Next week, I will start posting our meal plans on Sunday mornings because no one meal plans on Monday right? That’s what I’ve heard but I wasn’t ready yesterday and I had a doozy of a day so next week it is!

Recipe 4: Asian Turkey Meatballs & Carrot Rice
Recipe 5: Curry Mini Burgers & Sweet Potato Fries (I use ground turkey)
*I don’t have a recipe for the Chicken Apple Sausage & Sweet Potato “Salad”. My friend Maria introduced me to this deliciousness and I love it because it is ridiculously easy to throw together. I just slice the Chicken Apple Sausage (I get mine from Costco) and pan fry it. Do the same with a sweet potato until soft (to your preference). Throw the sausage/sweet potato mixture over greens of your choice. Maria uses Kale…we used spinach…both are delicious. Sprinkle feta on top and that is about it.

- 4-6 Boneless Skinless Chicken Breasts
- 2 Packs of Ground Turkey (FYI – Recipe 5 calls for Ground Beef but I just use Ground Turkey)
- 1 Pack of Aidells Chicken Apple Sausage
- 1 Onion
- 1 Zucchini
- 3 Carrots
- 2 Avocado
- 2 Sweet Potato
- 4-6 Garlic Cloves
- 2-3 Limes
- Spinach or Kale
- Salad of your Choice to serve with Recipes 1 & 2
Canned Goods/Spices/Sauces, etc.
- Coconut or olive oil
- Salt & Pepper
- Ground Cinnamon
- Sesame Seeds
- Soy Sauce
- Sriracha (optional)
- 1 24-ounce jar of marinara sauce
- 1 large can of Verde enchilada sauce
- Red Curry Paste
- Long-grain white rice
- Seasoned Bread Crumbs
- Lasagna Noodles
- Eggs (3)
- All-purpose flour
- Cheddar Cheese
- Mozzarella Cheese
- Feta Cheese
